Maybe I got this from my mom, I'm not sure. But when I cook, I often stray from the recipe or make up my own all together. Which can sometimes make things disastrous, but often turn out suprisingly well.
I remember my brother often saying to my mom, "If it's not broke, then don't fix it." when she would switch up some of his favorite meals.
Tonight I created a scrumptious concoction:
1 package of Lipton Taco Rice
1 can of RoTel diced tomatoes with lime and cilantro
1 can of black beans
2 chicken breasts (pre-cooked and sliced or shredded)
Bring the one cup of water to a boil. Add in everything but the chicken. Mix it all together. Cover and bring down to a simmer. Stir occasionally. Cook until rice is tender. Add chicken about 2 minutes before rice is done.
I put it on a tortilla added a little cheese and ate it like a burrito.
It was amazing. I am excited to eat the left overs all week.

you could also do that in your crock pot on a busy day. you might have to add more water but the chicken would be super yummy and fall-aparty.
